Vinification: Destemming and soft pressing then rack into a tank when happened the FIRST fermentation. The Cuveè is conserved in steel at 10 °C untill half spring when it’s bottled (TIRAGE) with sugar and yeasts for the SECOND fermentation in BOTTLE to obtain a natural lovely mousse. Then the bottles rest lying for minimum 2 years and after that (DEGORGEMENT) and topping using only the same wine without any addition. (DOSAGGIO ZERO)
