Vinification: Destemming soft crusching then cold skin contact maceration for one night, soft pressing and fermentation at a controlled temperature around 15-16 °C. The second fementation in the tank to obtain a natural lovely mousse.
Then the wine is filtered and bottled under sterile condition.
